The Assignment : Creating a localised Chicken Concept and making it Franchisable

The Approach : The market in inundated with chicken concepts, but Africans in Tanzania love their bird fried , grilled  and well done. First one was to explore Umami, second was to find which way we could work with open fryers or pressure fryers. From flavours, to type of chicken, to breading and sauces we worked the concept from the ground Up.

The Outcome :  The marinades, processes and sauces created for the brand are practically inimitable and have been passed on the brand as ‘Their Secret To Their Success. We have made Sliders, Grilled, Fried, Tater tots and so much more

CHUNKY CHICKEN, UK

The Assignment : Adding Value, Creating a Halal Chicken Concept and making it consistent and franchisable abroad. Developing blends and ideas for consistency to cover their global expansion

The Approach : The UK market in inundated with chicken concepts but none are Halal.  For Chunky Chicken we decided to scale up with a Commisary based model.  Grilled and Peri style, since it is a healthier option and optimising product and process. We also wanted to complement the sandwich with sauces that could actually draw a crowd.

The Outcome : The grilled chicken concept was taken very well by the market. So much that with its base in UK, we couldn’t complete a restructuring here. The marinades, processes and sauces created for the brand were for the UAE market.

SALAD CONCEPTS, U.A.E

Assignment : To create localised Sauce & Protein options for salads.

The Approach : Salad bars are everywhere. The ingredients are pretty much the same, so to bring in one compelling element we decided to create a string of local options. The process allowed us to integrate local flavours to global ingredients.

The Outcome : We created Proteins,  a range of halal dressings using 13 different souring agents which are predominantly consumed in the Middle East. We contributed layout, simplicity and opulence of eating salad ‘Build your own salad’. Four units now and we provide them bases and sauces.

Rock House Sliders , Sliders

The Assignment : They were Rocking, expansion needed signature blends and a level of Science and research and development

The Approach : We took their chefs and development team to understand Umami, Optimise flavours, crispy batters and textures. Created and curated their brand into a franchise which covered Bun, Protein, Sauces, And beverages .

The Outcome : The marinades, processes and sauces created for the brand are practically inimitable and have been passed on the brand and they are now a Part of Kitopi

Indian Concepts

Assignment : To create one Mother of All recipe deck and bring in consistency

The Approach : We worked with their team and covered their stores into a basic product based offering, with limited skill sets for consistency . Menu optimisation and flow tweaked to cover same.

The Outcome : They are now both on line and with brick and mortar stores, can serve food efficiently and with panache. Explore same
